Wild turkeys are incredibly lean and the breasts are almost always over cooked with traditional cooking methods. Sous vide is the perfect cooking method for this meat since it maintains the moisture. Once cooked, I brushed on barbecue sauce and placed the breasts under the broiler until darkened.

Cool, I've never had wild turkey, but we have lots running around here. How does the flavor compare to domesticated birds?

Looks good. I just got one today and he will be heading into the water bath tomorrow. Breasts I plan to do lower and longer than you did, like 131 for 8 plus hours. Legs I will do first 150 for 12 hours then drop the temp and leave them in when the breasts go in. This is a method from Chefsteps that works well for "regular" turkey. Since this is my first wild bird I will start with that then adjust next time if needed.

My aunt did 2 wild turkey breasts for Thanksgiving. I tried to get her to let me do 1 of them sous vide because I had mine with me. She didn't. The breasts were super dry.

Glad I didn't try traditional methods. You can see the level of moisture that still remained on my cutting board and that was after they were dried and broiled.

I see you said these weren't gamey, that's awesome to hear, since this looks great! I was just talking to a coworker yesterday who mentioned having wild turkey and he said it was horrible. I wonder if the process of overcooking it could cause it to go from mild and moist to dry and gamey?
